About

Yacon is an ancient Peruvian vegetable that is now grown in New Zealand! It is sweet and juicy, low in calories, and very versatile.

Not only does Yacon taste great, it contains a sweet form of soluble fibre (FOS) which has little impact on blood glucose and promotes a healthy digestive system.

Crowns ( the growing bit) are available all year round.

ROOT

Yacon roots are harvested from April/May through to September/October.

They resemble a kumara to look at, and have the taste and texture of a nashi-pear.

Yacon gets sweeter and softer over time. It stores well in a cool dark place or can be kept for months in the fridge.

 

 

PREPARATION

Clean and peel before using and dip in lemon or lime juice to prevent browning when used raw.

A great addition to salads and slaws, or summer rice-paper rolls as pictured. Yacon can also be roasted or casseroled.

      Hi Roland, we have plants and syrup available from here in the Waikato. Plants are available year round but should be kept in pots or a frost free area over the winter. The plants are grown from a crown which are $10 each, and another $5 to post.. multiples will save on postage. They will die down and come away again in the spring when it warms up.
